Spaghetti with chives pesto


This is as easy as it is delicious!

For the sauce you just need chives, salted cashew nuts, olive oil and cooking water from the pasta. Blend the lot and stir into the spaghetti (or any pasta). Decorate with chive flowers, if you wish.

Everyone is always amazed at the taste, and no one guesses that it is chives until I tell them. The colour is beautiful too!

Fresh As freeze dried herbs and spices for some Thai inspired Vegan curries


These were soooooo delicious!!! I made the side dish just with onion, tomato, green beans, Fresh As Chili Powder (plus a little oil for frying the onion and salt to taste. The 'main' green curry had all the others Fresh As powders (plus some chili): lemon grass, coriander, ginger, sweet basil and kaffir lime.  The kaffir lime was my favourite! I also added some Vietnamese mint from the garden.  It had tofu, potatoes, carrots, beans, onions and coconut milk, plus organic vegetable stock for seasoning. Served with rice. Amazing!

Potato salad with Fresh As Tarragon, capers and Friarielli flowers, plus focaccia and eggplants with Fresh As herbs - plant based paradise!


I have been trying a few freeze dried herbs from Fresh As and this potato salad is definitely a winner.

Boil the potatoes and peel, then cut and mix with vegan mayo and capers. Sprinkle with Fresh As French Tarragon. I also added some edible flowers from my friarielli (cime di rapa) plants.



The friarielli seeds come for Italian Seeds Pronto, such a great winter crop! Eat the leaves, tips and flowers!


I also tried other Fresh As powders: chili, garlic, oregano, basil and rosemary (plus the French Tarragon) on focaccia. I used letter stencils before adding the powders, just to record what went where. FYI, the garlic becomes orange after baking.





Delicious, and also pretty in a bread basket!


And on some fried eggplants (added after frying, with salt).

A carrot soup that actually tastes good!



Do you want a carrot soup that taste carroty but not too much? Carrot taste can be a little 'overpowering' and I am tired of seeing so many carrot and coriander soup recipes, so here is a variation with onions and thyme.

1 kg carrots
1 large onion
olive oil
Fresh thyme
salt
vegetable stock
Salt and pepper to season
Coconut Yogurt to serve (optional)

Clean and steam the carrots. In the meantime slice the onion and cook in a frying pan with a little olive oil, salt and a few sprigs of fresh thyme until translucent. Place the steamed carrots and onion in a mixer and turn into a puree. Place into a soup pot and cover with vegetable stock. Simmer on low for 20-30 minutes (the longer the better). Add salt and pepper to taste and serve hot with a few fresh leaves of thyme and, if you like, a dollop of coconut yogurt.

Coconut tofu and vegetables strips with Eastern herbs - plant based paradise



I planted some ginger roots in my garden from a bought root that started sprouting and got a beautiful plant... but the flower looked like that of the wild ginger (a weed in New Zealand) and I was a bit worried... my neighbour told me that it is a good ginger, the flower is similar but it doesn't make the seeds that birds spread around the forest. Well, since I was worried I remove the plant (the flowers looked good in a vase anyway) and used the root to make gari (delicious, recipe here) and this tofu dish.

Very easy: just simmer some sliced tofu in a pot with coconut milk, vegetable stock, ginger, chili, lemon grass and a shallot. Add some celery, carrots and capsicum strips and simmer for a few more minutes, then turn the heat off and add some cucumber strips, fresh coriander, basil and Vietnamese mint and serve with Thai rice.

And now a few more subtropical delights from my garden: cherimoya (not ready yet) and bananas (the best bunch so far, shared with many friends!)

Baby zucchini, zucchini flower and basil leaf beer tempura


This was so yum!!!! My zucchini plants now make only little zucchini, they must be tired. But baby zucchini are so delicious and special, and the flowers too, that I decided to make something scrumptious, like tempura. And also to add some big basil leaves: I love leaves in tempura, but I never tried Italian basil, it was amazing!!


For the batter I used a tempura flour mix and, instead of water, a chilled Peroni Leggera beer. Using cold beer produce a crispy tempura, plus you can drink beer while you are cooking :-).



Don't overtax the batter, make sure the oil is really hot, and cook the baby zucchini first, then the flowers and the basil leaves. sprinkle with salt and serve, with more beer!

Italian chips - patatine fritte (with olive oil, garlic and rosemary)


How silly can a recipe be? I never thought that I would bother writing something so basic, but the world where I live is so full of chips, and terrible chips I must say, that I very rarely eat them out, and very occasionally I like to make them at home the Italian way, patatine fritte, like we made on special occasions, usually on a Sunday. These are not deep fried but pan-fried, and they are flavoured with garlic and rosemary, 

Peel the potatoes, cut the potatoes into chip sizes, rinse (or just soak in water) and pat dry. Sizzle some garlic in a frypan with extra virgin olive oil, then add the chips and pan-fry stirring and/or shaking the pan constantly. I add just a little salt at the beginning, and remove the garlic before it burns. Then I add rosemary when they are nearly cooked (they takes about 20 minutes), finish with more salt and eat immediately (although if you cook them this way they are also tasty when cold, unlike British style chips). 

And now for something completely different (especially if you like birds!)

San Pellegrino drink for summer


The garden is full of produce and flowers, and also limes and mint, so cheers to summer in New Zealand with a glass of San Pellegrino sparkling water (just add fresh mint leaves and lime (or lemon). 

What else I have now? Silverbeet and rainbow chards, calendula and radishes (recipes coming soon)

Peperoni e salvia fritti - fried capsicums and sage


Red capsicums are so nice fried in olive oil, and then sprinkled with a little salt… this time I tried a different pairing though: sage! And it works really well. Of course I really like fried sage, so I guess that that help. (In the background I have some fried eggplants, but you all know how to make that right?) :-)

Cherry tomatoes with raw nut cheese and edible flowers



After the raw vegan mushroom and nut macaroons here is another cute raw vegan appetizer! Make a cross incision at the base of cherry tomatoes, stuff with some raw vegan nut cheese (recipe here) and decorate with herbs and edible flowers. They taste so good and are incredibly pretty!

Israeli cous cous with grilled eggplants and capsicums


  For this dish I cooked a packet of Israeli cous cous (but fregola pasta is perfect too) with just water and salt, then I drained it and rinsed it under cold water to cool it down and separate the 'grains'. I added extra virgin olive oil, a few drops of lemon juice, and finely chopped herbs and garlic. Then I mixed it with the char-grilled eggplants. Finally I filled some char-grilled capsicums with it. It needs to rest for a few hours at room temperature, so that the cous cous gets more flavour. Easy and quick, and it makes such an impression!

Polenta and Italian lentils - Polenta e lenticchie


 This dish is vegan and gluten free, for the polenta recipe I just use polenta flour, water and salt and follow the packet instructions (real polenta takes about 45 minutes, the instant takes 5!). Usually I make soft polenta, thus adding a bit more water, but packet instructions tend to be for the 'harder' type, the one that you pour onto a wooden chopping board and then cut into slices. My nonna (Grandmother) used to make the hard one, and then she cut it with a string attached to the chopping board: no knife needed and even the youngest kids can do it!

For the lentils, wash the brown lentils with water and then soak for a little. Soaking is not really necessary but I like to do it so then I can give them another rinse and get rid off possible dirt that 'escaped' in the first wash. In the meantime sauté a finely chop carrot, celery stick with leaves and garlic (or onion) with two tbsp of olive oil, add the lentils and cover with vegetable stock. You can also add a tbsp of tomato paste, or some herbs, but this time I just added some chopped parsley at the end of cooking. Simmer the lentils as long as you can, stirring often and adding more water if necessary. Adjust with salt and pepper (and parsley) at the end, add another drizzle of extra virgin olive oil and save hot, with slices of hot polenta.

Potatoes and carrots with sage, rosemary and garlic


Digging up the garden I pulled some ugly carrots and a few potatoes (white and yellow). I cleaned them and boiled them until cooked but firm, then I remove the skins (from the carrots too!) and sautéd them with olive oil, garlic, sage, rosemary and a pinch of salt. Really simple but super tasty!!

Picking, treating and preserving olives in brine, and olives marinated in olive oil and herbs


Preserving olives is a rewarding experience. If you don’t have an olive tree you may be able to forage olives from trees in community gardens and in parks.  Usually olives are ready around April-May (in New Zealand).
Pick the olives from the tree (never from the ground) and wash well in cold water. If you prefer sweet-tasting olives you can put them in a bucket of water for up to 40 days, or 20-30 days for very small olives, changing the water every 24 hours; the olives will become brownish in colour, and lose a lot of bitterness. After this period make a brine (recipe follows) and bttle your olives. If you prefer crispy green olives with a peppery taste, just wash them and soak them for a day, then preserve them in brine.

Before making the brine, be sure to have plenty of glass jars with lids, sterilised and completely dry.

Ingredients
Water
Salt

Prepare 10% salt brine (100 g of salt for every litre of water) by placing in a saucepan the water and salt.  Simmer until the salt is completely dissolved. Once the brine is cold place the olives into clean sterilised jars and cover completely with the brine.

To each jar add one more clove of garlic, a fresh bay leaf, a chilli pepper, or a fresh sprig of thyme.  Seal and put away in a dark place for three months. After this period the olives can be used in cooking or can be marinated with olive oil and your favourite herbs.
If you’d like to keep the olives for longer, prepare a new brine with an 8% solution (80 g of salt every for every litre of water) and put the olives into new jars with the fresh brine. Olives stored this way, and completely covered with brine, will last up to one year. Don't worry if you see white spots forming at the top of the brine, as this is natural — just remove them every time you open the jar, and always rinse the olives before using. Below is a recipe for marinating your preserved olives with olive oil and herbs, starting with your olives in brine.
  



Olives marinated in olive oil and herbs

I suggest you use a delicate olive oil for this recipe, like an extra virgin olive oil from the supermarket. Expensive olive oil is far too precious to marinate olives, unless you have your own press.

Ingredients
300 g olives in brine (green or dark)
1 sprig fresh thyme
1 sprig fresh oregano
1 sprig fresh rosemary
6 peppercorns
200 ml extra virgin olive oil


Drain the olives well from the brine, and give them a little rinse if necessary. Place in a large jar, add the herbs and pepper corns, and cover with the oil. Leave to rest for at least one day, and then serve. Store in a cool place and use within two weeks.

Vermicelli in coconut and veggie broth with tofu and Asian fragrances


This is an aromatic vegan and gluten free soup, light and delicious.


500 ml vegetable stock
1 can coconut cream or milk + one can of water (rinsing the coconut cream)
1 large yellow courgette (zucchini)
2 fresh red chilies
1 block of tofu
a pinch of freshly grated ginger
1 stalk lemon grass
Vermicelli
a few coriander leaves
a few cherry tomatoes

Simmer all together for a few minutes until the zucchini are soft but not mushy.

In the meantime soak the vermicelli in hot water until soft then divide between 6 bowls.
chop a few cherry tomatoes, and wash some fresh basil and some thai mint

Pour the hot soup over the vermicelli, making sure that each dish has equal parts of tofu and veggies.
Decorate with the tomatoes, basil and Thai mint and serve immediately.

Zucchine ripiene - Stuffed zucchini


I have two zucchini plants in the garden, one yellow and one green. They produce a lot, the yellow three times more than the green (I don't know why) and we have been eating zucchini in 100 different ways: grilled, sautéed, fried and tempura, in soups, with pasta… fortunately they are very versatile!
Here I had a few big ones (sometimes I don't pick them for a day and they double overnight! But the important thing is that they don't get to the 'marrow' state - too big and bitter) so I decided to stuff them.
I cut them into two and scooped out the flesh. Then I baked the shells upside down with a pinch of salt and a drizzle of olive oil for 15 minutes. In the meantime I blended the zucchini flesh and then added chopped parsley and chives (about 1 tbsp), salt and pepper, a tbsp of olive oil and enough breadcrumbs to make a stuffing (add the breadcrumb one tbsp at the time so that you don't add too much). The zucchini were fresh from the garden and therefore they were very moist, so I needed more breadcrumbs, but if you buy them they may be a few days old and more dry, so less breadcrumbs are needed. I removed the zucchini from the oven, turned them up and filled them tightly with the stuffing. 
In the tray you can see also some zucchini slices, these where from 'regular' size zucchini, and I used them as side veggies.


Bake everything until the stuffing has a nice golden crust and serve.

Watermelon juice with lemongrass and mint

  I used the flesh of a small watermelon (blend with ice and a bit of water - to get the blender moving) and then passed the juice through a sieve (not too fine, just enough to keep the seed pieces out) and then stirred it with a stick of lemongrass (best if you can leave it in the fridge with the lemongrass for 30 minutes). My mint is quite 'strong' so I added it only at the end, for decoration and a hint of fragrance. Serve with ice. I am sure that there will be readers that will think of vodka too!

A basket of veggies from the garden to make soup


Vegetable soup with: yellow zucchini, green zucchini, plum tomatoes, parsley, chives, celery,
carrot, silver beet, onions. The onion are really small but I can't grow them any bigger in the bush so
I grow them in pots.
Chop, add water (rain water for me, so this too is free!) and salt, then cook. You can add a bit of
extra virgin olive oil at the end.
