Coconut tofu and vegetables strips with Eastern herbs - plant based paradise



I planted some ginger roots in my garden from a bought root that started sprouting and got a beautiful plant... but the flower looked like that of the wild ginger (a weed in New Zealand) and I was a bit worried... my neighbour told me that it is a good ginger, the flower is similar but it doesn't make the seeds that birds spread around the forest. Well, since I was worried I remove the plant (the flowers looked good in a vase anyway) and used the root to make gari (delicious, recipe here) and this tofu dish.

Very easy: just simmer some sliced tofu in a pot with coconut milk, vegetable stock, ginger, chili, lemon grass and a shallot. Add some celery, carrots and capsicum strips and simmer for a few more minutes, then turn the heat off and add some cucumber strips, fresh coriander, basil and Vietnamese mint and serve with Thai rice.

And now a few more subtropical delights from my garden: cherimoya (not ready yet) and bananas (the best bunch so far, shared with many friends!)

Raw Vegan Nut Cheese


This is commonly called Vegan cheese or nut cheese, although to me it feels more like a very 'intense' dip. Full of protein and spreadable, it stores well for a couple of weeks in the fridge.

Ingredients:
120 g cashews
80 g macadamia
1 small shallot
2 tbsp lemon juice
water (just enough to blend the nuts)
salt and pepper to taste

Soak the cashews for 4 hours, drain and place in a food processor (or use an immersion blender). Add the shallot, peeled and chopped, lemon juice and a little water. Blend until smooth, adding more water if necessary. Add salt and pepper to taste (I do this little by little while blending).

Store in the fridge.

Cavolo nero soup with chickpeas and pasta



A low fat, high protein vegan dish

1 bunch of cavolo nero
1 shallot
1.5 l vegetable stock
1 can chickpeas
plus the same amount of water
1 cup of small pasta 
salt and pepper to taste
extra virgin olive oil to drizzle

Wash the cavolo nero and remove the white stalks. Slice the shallot. Put everything in a pot with the vegetable stock and bring to the boil. Simmer for 30 minutes. Add the content of the can of chick peas, plus a can of water. Simmer for other 30 minutes then blend with an immersion blend, but not too finely, leave some of the chickpeas whole. Bring back to the boil, add the pasta and simmer until the pasta is al dente. Taste for salt and pepper and drizzle with olive oil before serving. It is actually better the day after!

Thai vegan green curry



 First I started with a simple paste made with a small piece of ginger (peeled), one shallot (also peeled), fresh coriander (with stalks), green chili (not too much for me, maybe one or two), and fresh lemon grass (one stick). If you have kaffir lime leaves or rind, the are good too, apparently, but I didn't have any so I added a little lemon juice. Mush with a mortar and pestle or with a blender (I used the blender, too hot for the mortar and pestle!) adding salt towards the end. 
Now, the only thing in the paste that came from the garden was coriander, and frozen (from last year) as this year my plant died! I also have lots of frozen chills to use, and a little plant that don't even have flowers yet! 

The veggies: 1 carrot, 2 yellow zucchini, a few tomatoes, a few broccolini, borage tips, green capsicum, Thai mint, basil, onion weed flowers  and borage flowers to decorate.

then: organic tofu and coconut cream.

I cut the tofu and placed it in a pot with the coconut cream plus one can of water (to rinse the coconut cream can). Added the green curry paste and simmered the lot for 10 minutes and then I added the rest of the vegetables in this order: carrots, borage tips, capsicum, zucchini, broccolini, tomatoes (leave a couple of minutes between each vegetable). To stir I used a lemongrass stalk. Then I tasted for salt then I added the herbs and onion weed flowers (because they were frozen), turned the heat off and cover the pot with a lid for 5 minutes. Then I added the borage flowers.

Actually, the curry paste took longer than the curry to make! Serve hot with rice.

Coconut and ginger tofu



Ingredients:

Two blocks of soft tofu
1 shallot
2 fresh red chillies 
1 can coconut cream
500 ml vegetable stock
1/2 teaspoon fresh grated ginger
fresh coriander
fresh Vietnamese mint (or basil)

Drain the tofu and cut into slices. Finely chop the shallot, and roughly break up the chili, discarding the seeds unless you like your food very spicy. Place everything in a pot with the coconut cream and vegetables sock and simmer for 20 minutes. Grate the ginger and add to the tofu, finish off with some fresh coriander and Vietnamese mint leaves. If you don't have Vietnamese mint use fresh basil.
Serve with Thai rice or noodles.

Tofu with Smoked Paprika and Pomodorini, vegan and gluten free main





This is a great vegan main, full of flavour and proteins. I cooked it for Bence and Judit, they like tofu and they asked for the recipe, so here it is:

Ingredients:

10 pieces of dry tofu (Japanese)
500 ml vegetable stock
2 shallots
4 tbsp extra virgin olive oil
1 tsp smoked paprika (or more, to taste)
1 can Italian cherry tomatoes (I used Mutti)
1 cup of water (to rinse the tomato can)
1 carrot
Salt to taste

I used ten pieces of dried tofu (like this one), soaked in 500ml of vegetables stock. Dry tofu is like a sponge and it will absorb flavors well (so use some good vegetable stock!). Then I sizzled a couple of finely slices shallots with 4 tbsp of extra virgin olive oil, then I added the tofu (soft after soaking in the vegetable stock) and sautéd it on both sides for a minute, then I added one tsp  (well, probably a bit more...) of smoked paprika, sizzled the tofu in the spice for a little longer, and finally one can of Italian cherry tomatoes, one cup of water, and one carrot, cut into thick slices). I cooked everything until the sauce was reduced and quite thick, and the carrots soft.

Add salt to taste and serve. Tofu is yummy!

Stuffed white cabbage leaves with lentils






This is a first. I like stuffed cabbage leaves but I always use this dark green curly cabbages (like Savoy) to make them, and I never used the round and firm white cabbages that are used to make coleslaw. But I happened to have a big white cabbage and the outer leaves were sort of green... I managed to remove 7 leaves before the cabbage become to compact to pull apart. Then I washed them and boiled them in salted water (which I later used to make vegetable broth for an Asian noodle soup - never waste!). I also boiled a few more cabbage leaves that got broken while I was trying to pull them away: they were going to be used in the filling.




For the filling I used some cooked cabbage leaves, a couple of slices of vegetarian bacon, chopped parsley, breadcrumbs, smoked salt, chili flakes, coriander seeds and smoked garlic. I mushed everything with my hands and divided the filling between the 7 leaves, and then I rolled them up.




I prepared a soffritto with a shallot, half a carrot, a celery stick, and some chopped parsley, all sautéed with a little olive oil. 




I added the cabbage leaves and let them sauté on one side only for a few minutes.




Then I added one cup of tomato passata (Italian tomato sauce) and one cup of vegetable broth. I covered the pot with a lid and let the cabbage rolls simmer for 30 minutes.




After 30 minutes I added the content of a can of Italian brown lentils (their water included) and simmered everything for another 30 minutes.




Well, I just managed to taste one, the other six were two each for the kids and the babysitter (I was teaching that night), to be eaten with bruschetta (actually, just a baguette cut into slices and the brushed with olive oil, sprinkled with salt and baked until golden and crispy, the kids just love it!!). The result? I was pleasantly surprised: I am not a fan of white cabbage, but in this way it tasted great! Pity that I could not get more leaves out of it, maybe I need to boil the whole cabbage and then try to pull off the leaves... next time I will try. Or maybe I will just go back to use my usual Savoy cabbages! :-)

Asparagus, mange tout and peas with champagne







Sauté one finely chopped shallot with a tbsp of extra virgin olive oil. Add the stalks, chopped, of a dozen asparagus, stir for a couple of minutes and then add a glass of leftover bubbly and an organic veggie cube (I only use Rapunzel). Let the wine evaporate then add two cups of frozen peas. Add more bubbly if liquid is needed. When the peas are cooked add the asparagus tips and some mange tout or sugar snap peas. Stir quickly to lightly blanch the asparagus tip and sugar snap peas (you still want them very green and crispy). A feast of different textures and greens, and a perfect side veg.

Champagne Zucchini






I made this a while ago but I didn't find the time to post it. I know that zucchini are not in season now, but many of you live in the Northern Hemisphere, so you may appreciate the idea. FYI I didn't buy Champagne especially to make this :-), I just had some leftover, and I didn't want to waste it.
Sauté the zucchini and a shallot with one tbsp of olive oil and a pinch of salt for a few minutes, then add the champagne (I had just over a glass).




Don't add water, between the champagne and the water from the zucchini you should have enough! Keep cooking and stir often until all liquid has absorbed and the zucchini are soft (about 20 minutes). Adjust with salt and pepper and finish with some fresh chopped parsley. I really liked it, and now I know what I will do if I ever get some leftover champagne again. Or any other bubbly :-).

Green Curry Tofu and Beans with Rice Served on a Banana Leaf








I had some leftover green curry paste in the freezer. When I make green curry I usually have too much for one meal so I freeze the rest (it freezes really well). My paste is really simple, some fresh ginger (peeled) some shallot (also peeled), fresh coriander (with stalks), green chilli (not too much for me, maybe one or two), and fresh lemon grass (one stick). If you have kaffir lime leaves or rind, the are good too, apparently, but I didn't have any. You should use a mortar and pestle, but I just added a little salt and blended everything in the food mixer.


For the curry

1 tbsp of green curry paste
2 tbsp oil
Green and yellow beans
Tofu, cut in big pieces
1 can coconut cream
Water
Fresh Vietnamese mint
Chilli (optional)

accompany with a blend of long and wild rice.


Sizzle the curry paste with the oil, add the beans and tofu, and then the coconut cream. Fill up the empty can of coconut cream with water and add (this way you can rinse and save all the coconut cream that get stuck to the can). Add salt only if you need it (my paste was salty already). Cook for 20 minutes, then add the Vietnamese mint (but also fresh coriander or Thai basil, if you have them) and the chilli, if you wish. Serve with steamed rice.



I love setting the table for different occasions, and since what I like is to source my food from the garden or from the wild, I wanted to source my mise en place in the same way too.

 I have a corner in my garden that looks quite tropical, with a few banana plants.




I went out with my machete: dadadadaaammm!! Those of you who have meet me are probably giggling by now, I am not exactly a bush woman!





The leaves needs to be washed well, like you would do with china, and dried with a tea-towel.




For a romantic dinner share a leaf between two.
Food can be served directly on the leaf (use as a plate) so I put the rice on the leaf but left the curry (it has a liquid sauce) in a bowl. Then you can pour the curry over the rice (use a nice ethnic wooden spoon) and eat with... fingers?? I never managed to, so spoon and fork worked well for us.

How to Make a Vegan Bolognese Sauce


Usually I don't use this kind of soy meat, I rather make a bolognese sauce with lentils, much easier, but I saw the packet in the supermarket, and I like to make lasagne with bolognese sauce (please do not spell it bolognaise!), so I went for it.





I soaked the textured soy with 500 ml of vegetables stock, it tripled in size.




In the meantime I cleaned one large carrot, 2 celery stalks with leaves, 2 shallots, 2 garlic cloves and some Italian parsley.




I chopped the veggies and sautéed them with olive oil,




I added the textured soy and a glass of red wine, then 1 800 ml can of Italian chopped tomatoes, and 3 tbsp of tomato puree. At this point I let the sauce simmer for a couple of hours, adding salt and black pepper from time to time, tasting it to see if it needed more. Soy protein is very low in fat, so I added more olive oil because bolognese needs a percentage of fat to taste good.



It also needed more wine, but I finished the bottle. My husband had opened a nice 10 years old Australian red, to air. I put some of it in too, even if he looked at me badly. That wine was to good to cook with!
But just a little... and it made the sauce so nice :-). In the end he agreed with me, and then the wine needed to be drunk, or used! No other herbs or spices are used in the traditional bolognese sauce, in fact the cuisine of Bologna uses very little or no herbs, so please don't add oregano, chili, etc. to a bolognese sauce: go for more red wine, black pepper, salt, and (as this is vegan) olive oil to enhance the taste. If you don't use wine add more tomato puree.


Ready!!! Just don't use it with spaghetti please: spaghetti bolognese is not right, use it for tagliatelle, lasagne, or short pasta :-). Can also be used to fill pies or with polenta.

Nam Prik Thai dip





This is my adaptation of the Thai dip Nam Prik, (there are many versions, this one is more like the ones from the North of the country). I like this version because the ingredients are easy to find in most countries, but the taste is really 100% Asian!

Ingredients:
1 or 2 fresh green chilies,
1 or 2 fresh red chilies,
1 eggplant (possibly white, but I tend to use the purple ones which are easier to find)
2 garlic cloves (peeled),
1 shallot (peeled) ,
1 or 2 tomatoes,
2 tbsp lemon juice,
2 tbsp light soy sauce,
half tsp salt
(In Thailand they also put in a littles sugar, but I don't)

Wrap the chilies, eggplant (cut into four) garlic shallot and tomatoes in a sheet of tin foil. Seal well and bake at 175°C for 30 minutes. Remove the content and place:

1) in a large mortar, and start pounding with the pestle adding the lemon juice, soy sauce and salt. this way you will get a a chuncky sauce with lots of skins but lovely and spicy.
or
2) in a blender, for a smoother texture.

Now, in the original recipe they don't remove the skins from the vegetables, but I do, and also I add less chilies (max 2). If you like to add sugar the dose is 1 tsp.

The colour is not great (brown), but the taste is truly addictive! Serve as a dip for raw vegetables sticks or to accompany rice and other Thai dishes.

Risotto with Zucchini and Tofu




Still plenty of zucchini in the garden...I have been cooking them in 100 ways, so here is a risotto!





Ingredients

1 block of tofu, frozen and then defrosted
1 shallot
2 yellow zucchini
2 green zucchini
2 tbs olive oil
400 g arborio rice
1 glass wine (optional)
1.5 l vegetable stock

If you freeze the tofu, and then defrost it, it becomes porous and absorbs flavours like a sponge! Also it doesn't brake into pieces while you are cooking it, even in risotto, when you have to stir often!

Cut the tofu into small cubes. Chop the shallot and slice the zucchini. In a capable saucepan sauté the shallot and tofu with the olive oil. After a couple of minutes add the rice and, when hot, the wine. Stir and add the zucchini, and then, ladle by ladle, the vegetable stock.

Cook as for any risotto, slowly and stirring often, adding liquid only as needed. Serve immediately.

Yellow Beans




In the garden I saw my first yellow beans!!!



I picked them immediately, the more you pick them and the more they seem to grow, and the plants still have so many flowers on!



Initially I thought of cooking them with a tomato sauce, but then I changed my mind: they are so fresh, and the first, so I just sautéed a shallot with olive oil, added the beans (washed and top and tailed, of course) and sautéed them gently for a little. Then I added a pinch of salt, put the lid on, lowered the heat, and let them cook in their own steam for about 10 minutes (checking and stirring from time to time). I didn't need to add any water, probably because they were so fresh, and they tasted perfect!
