Tofe con friarielli (cime di rapa)



For the first time in my life I planted friarielli (cime di rapa), I got the seeds from Slow Food Auckland and I was so excited that I didn't wait for Autumn but I planted them straight away. Auckland is hot and wet, so they grew fast and started flowering quickly, I had to pick them before they seeded even if the tops were small. But they were delicious. I also have to confess that I ate some as salad, when the leaves were very young, and they are probably one of the best alternative to rocket salad around.


After I got my first batch I cleaned it and then cooked in a pan with olive oil, garlic and salt. You can add chilli, but I prefer to taste the friarielli rather than the chilli. Simmer them slowly with a lid for 20-30 minutes stirring often, if they are fresh you don't need to add water (mine came directly from the veggie garden!). The best pasta to have them with is orecchiette, but I didn't have any so I used some tofe, which are close enough in shape, but different in flavour! Still, they were great, or maybe it is just me, happy with my new crop of friarielli!

Vermicelli in coconut and veggie broth with tofu and Asian fragrances


This is an aromatic vegan and gluten free soup, light and delicious.


500 ml vegetable stock
1 can coconut cream or milk + one can of water (rinsing the coconut cream)
1 large yellow courgette (zucchini)
2 fresh red chilies
1 block of tofu
a pinch of freshly grated ginger
1 stalk lemon grass
Vermicelli
a few coriander leaves
a few cherry tomatoes

Simmer all together for a few minutes until the zucchini are soft but not mushy.

In the meantime soak the vermicelli in hot water until soft then divide between 6 bowls.
chop a few cherry tomatoes, and wash some fresh basil and some thai mint

Pour the hot soup over the vermicelli, making sure that each dish has equal parts of tofu and veggies.
Decorate with the tomatoes, basil and Thai mint and serve immediately.

Coconut and ginger tofu



Ingredients:

Two blocks of soft tofu
1 shallot
2 fresh red chillies 
1 can coconut cream
500 ml vegetable stock
1/2 teaspoon fresh grated ginger
fresh coriander
fresh Vietnamese mint (or basil)

Drain the tofu and cut into slices. Finely chop the shallot, and roughly break up the chili, discarding the seeds unless you like your food very spicy. Place everything in a pot with the coconut cream and vegetables sock and simmer for 20 minutes. Grate the ginger and add to the tofu, finish off with some fresh coriander and Vietnamese mint leaves. If you don't have Vietnamese mint use fresh basil.
Serve with Thai rice or noodles.

Chili and garlic Swiss chard (coste aglio olio e peperoncino)


Swiss chard (silver beet) is a vegetable that you can find all year round, and fortunately I love it. Also it can be cooked in so many ways, as a side or as an ingredient for a main. This is a quick side, I never had it 'spicy' and I was pleasantly surprised! 

Just wash the silver beet (chard), cut the white stalks and leaves into fork-size pieces (pieces that you can pick up with a fork). Heat some extra virgin olive oil in a pan, add a peeled clove of garlic or two, and some fresh chilies (I added a green and a red, chopped). When the garlic and chilies sizzle add the white stalks and stir. After a few minutes add the leaves and salt to taste. Cover and let the leaves cook in their own steam, stirring from time to time. Serve hot. Yummy, different and super easy!

Pumpkin with coconut cream and basil (and add tofu to make it into a main!)





I had half a pumpkin to use, but just a little bit of Thai herbs mix (ginger, lemon grass, chili, garlic and coriander), certainly not enough to give my pumpkin a spicy flavor! Still, I felt like coconut, so I cut the pumpkin and two celery stalks with leaves and put them in my pot, then I added one can of coconut cream plus one can of water (to rinse the cream out), the remaining Thai herbs mix (about half tsp) and one organic veggie stock cube. I cook the lot until the pumpkin was soft, then I adjusted it for salt and added plenty of fresh basil leaves. I wanted to add some of my Vietnamese mint but it has all dried up (no rain in Auckland either) but the basil was strong flavored and I was surprised how nice this tasted in the end! I though of using this as a side dish (like in the photo) but I run out of time to make the main and since this dish had so much sauce I just added some cubed firm tofu to it when I warmed it up for dinner. I served with Thai rice. Very nice way of eating pumpkin in summer!

Stuffed white cabbage leaves with lentils






This is a first. I like stuffed cabbage leaves but I always use this dark green curly cabbages (like Savoy) to make them, and I never used the round and firm white cabbages that are used to make coleslaw. But I happened to have a big white cabbage and the outer leaves were sort of green... I managed to remove 7 leaves before the cabbage become to compact to pull apart. Then I washed them and boiled them in salted water (which I later used to make vegetable broth for an Asian noodle soup - never waste!). I also boiled a few more cabbage leaves that got broken while I was trying to pull them away: they were going to be used in the filling.




For the filling I used some cooked cabbage leaves, a couple of slices of vegetarian bacon, chopped parsley, breadcrumbs, smoked salt, chili flakes, coriander seeds and smoked garlic. I mushed everything with my hands and divided the filling between the 7 leaves, and then I rolled them up.




I prepared a soffritto with a shallot, half a carrot, a celery stick, and some chopped parsley, all sautéed with a little olive oil. 




I added the cabbage leaves and let them sauté on one side only for a few minutes.




Then I added one cup of tomato passata (Italian tomato sauce) and one cup of vegetable broth. I covered the pot with a lid and let the cabbage rolls simmer for 30 minutes.




After 30 minutes I added the content of a can of Italian brown lentils (their water included) and simmered everything for another 30 minutes.




Well, I just managed to taste one, the other six were two each for the kids and the babysitter (I was teaching that night), to be eaten with bruschetta (actually, just a baguette cut into slices and the brushed with olive oil, sprinkled with salt and baked until golden and crispy, the kids just love it!!). The result? I was pleasantly surprised: I am not a fan of white cabbage, but in this way it tasted great! Pity that I could not get more leaves out of it, maybe I need to boil the whole cabbage and then try to pull off the leaves... next time I will try. Or maybe I will just go back to use my usual Savoy cabbages! :-)

eggplant and chickpea tajine with cous cous







No fuss eggplant and chickpea tajine

Slice 2 eggplants and sweat them with salt for 1 hour. Heat a couple of tablespoons of extra virgin olive in the tajine pan, and sizzle 2 cloves of garlic (cut into two lengthwise), a few coriander seeds, a few cumin seeds, chili flakes and rock salt. When the spices start to jump around the pan add a roughly chopped onion and when the onion is translucent (not brown) add the eggplant sliced (rinsed). Sauté for 5 minutes, stirring, and then add the content of a can of chickpeas (with their liquid) and a handful of coriander leaves (or parsley, if you don't have/like coriander). 



Now cover with the Tajine top and simmer on the lowest setting for a hour or so. At the end the eggplant will be a mush, and the chickpeas incredibly tasty. Add some smoked paprika if you like it hotter. Serve on couscous dressed with extra virgin olive oil and freshly squeezed lemon juice.

Tiny new potatoes, two recipes with herbs and spices (and other veggies too...)




Potatoes and Cape gooseberries



The veggie garden is full of small potatoes, I picked a few, some really tiny, but I didn't want to leave them there, and the kids love them. I washed them and boil them, in three batches, from the largest to the tiniest.






After boiling them, the larger (but still new potato size) were then sautéed together with small steamed carrots and green beans in olive oil, garlic, smoked paprika, cumin seeds, chili flakes, coriander seeds, and salt. A very satisfying combo!




The smaller potatoes were sautéed with garlic, olive oil, rosemary, sage and salt. A real luxury to eat such small potatoes, but I need to make more space in the garden, and there are plenty more to dig up!

Roasted Veggies with spices or balsamic vinegar




I was not sure if you post this or not... I roasted some veggies, pumpkin, potatoes (previously boiled but not too soft) and orange kumara with red onion... everything was drizzled with olive oil and the first two were seasoned with salt, smoked paprika, garlic, cumin seeds and just a little chili. The kumara and red onion just had salt and olive oil, and once baked I added some Aceto Balsamico Tradizionale di Modena. Everything was so yummy, but ... by mistake I must have deleted the image with the roasted veggies! I looked for it on my phone, it was gone, completely gone! I think that these days I am taking far too many photos with my iPhone, and to make space I need to delete a lot of them, and sometimes I delete them before downloading them!!! Yes, it is not the first time that something like this has happened :-(. Does it ever happens to you? And does anyone know how many pics I can have on my iPhone at any moment? I am so scared of overloading it... thank you and enjoy the pics of the 'raw' vegs!

Roasted New Zealand Yams







Sometimes I am really happy to be a vegetarian: it means that I don't have to try wild specialties like huhu grubs. Not that many New Zealaders would either, you can't buy them in shops (I think) and you have to forage for them in the bush (they eat rotten wood) or go to special wild food festivals like the Hokitika Wild Food Festival. But I found a better, and vegetable alternative, with New Zealand yams.




Yam are much bigger than huhu grubs, and I got the red and the apricot colour varieties, I thought that they looked really pretty. After boiling them the colours had faded, a lot, and the look was... well, like in the photo above. I left them on the kitchen bench and went to get the kids from school. As soon as they arrived home the went" "Huhu grubs????". No, they have never eaten them, but they saw them and know what they look like. They giggled a lot, they said that yams really looked like gigantic huhu grubs.




Just boiled they didn't appeal to me, so I roasted them with olive oil, smoked garlic, smoked salt, coriander seeds and a few chili flakes, and they went down a treat. In this household my husband is the only one that has ever eaten huhu grubs, I asked him if the flavour was similar to these yams, he said: "No, these  taste much better!"

Banana flower salad






One of my banana plants has green bananas now, I read somewhere that it is good to cut the flower off, and wrap the bananas with blue plastic. I did just so, thinking that it is getting cold here, and maybe I won't get any bananas... and then I thought of, at least, eating the flower! I looked in all my books but I could not find a recipe, and yet I remembered eating banana flower salad ages ago, somewhere in Asia... I checked on the net, I found a few recipes, and the one that I most liked was this one. Of course I did a few variations, according to my taste.




Banana Flower Salad

Ingredients
1 banana flower
Juice of 2 lemons
1 clove of garlic
1 fresh chili
2 tsp sugar
1 tsp salt
A few leaves of Vietnamese mint
A few leaves of coriander
1 large potato, peeled and cubed





First juice the lemons and keep the juice at hand. Start peeling the flower, removing all the purple and pink petals, and the flowers that you will find underneath, (apparently you can eat these too, but they need some fiddly cleaning which I didn't feel like doing, and the taste wasn't too strong or appealing.




Work on your flower until you get to the centre and you cannot remove anymore petals, but keep the petals aside for later.




Finely chop the banana flower core, sprinkling it with lemon juice as you go, since there is a sap that will quickly turn your bud black.



The leaves can be washed and dried and used as plates.




Put the chopped banana flower in a bowl and add the remaining lemon juice, the sugar and salt, the Vietnamese mint leaves. Finely chop the garlic, chili (I used a yellow one, but I removed the seeds) and coriander, and add to the salad.




The salad need to marinate for a few hours, otherwise it will taste really astringent, a bit like unripe persimmon.



To speed up the marinating process I pressed the salad down with a weight (in this case another bowl full of water. But I knew that it would still be a little astringent, so I decided to solve the problem by adding a potato. I peeled and cubed a big potato, and boiled it with a pinch of salt. Then I drained it and let it cool down.



I waited about 4 hours, then I stirred the salad well, drained off the excess liquid from the marinade (quite a bit), added the potatoes and stirred. I put everything inside four banana leaves, and served it as an antipasto to my family.




The verdict? They loved it, even the kids, they recognized the Vietnamese flavours in it (they loved Vietnam and its food) and they liked the texture and the fact that it was our own banana flower! Now they just hope that the bananas will ripen too, and that the other banana plants will also flower.

Tofu and Brassica Green Curry



Day 6 of Vegan MoFo




Ingredients:

1 tbs green curry paste (see recipe here)
1 can coconut milk
1 couliflower, cut into florettes
half carrot, sliced (I sliced it in the shape of flowers)
1 block tofu, cut into pieces
1 large broccoli, cut into florettes
1-2 chili peppers
Thai or regular fresh basil leaves
Thai or Vietnamese fresh mint leaves


Place the paste in a pot with the coconut milk, the cauliflower, carrot, and the tofu. Cover and simmer for 10 minutes. Add the broccoli, cover and simmer for 5 minutes (I like my broccoli to be still green and a little crunchy). Add the chili peppers and the fresh herbs, cover and simmer for 5 more minutes. Add salt to taste and serve with Thai rice.

Ginger and Chili Tofu







 I like cooking with ginger, especially when the weather is colder. Most of my Chinese style dishes are very simple, I usually make a tofu or a gluten (seitan) dish, and a side vegetable dish, to serve either with plain rice, or noodles.



 To use fresh ginger I cut a piece from the root, peel it, and then grate it using the ginger grater that I got in Japan (Italian bloggers, you can use the apple grater designed to grate apples for baby food).


Ginger and Chili Tofu


Cut a piece of firm tofu into cubes, top with a chili, sliced, and some grated ginger. Add a couple of tbsp of gluten free soy sauce (or regular light soy sauce) and let the tofu marinate for a few hours, stirring it from time to time so that it gets all coated with the sauce.



 Drain the tofu but keep the sauce and all the chili pieces aside: they will be used later. Heat 1 tbsp of vegetable oil (I use rice bran) and lightly fry the tofu on all sides. Lift the tofu from the pan and set aside. Add one tsp of cornflour to the marinade, and a couple of tbsp of water (if it looks too thick), mix well and then put into the same frying pan (or wok) where you fried the tofu. Do not rinse the pan, usually some pieces of tofu get stuck there (they are the best!), but scrape them all up while stirring the sauce. The sauce will thicken immediately, add 1 tbsp of tomato ketchup, and then the tofu. Stir and serve immediately.

Italian-NZ Vegan Casserole


Italian tomatoes and NZ Vegemite... Is it fusion? 





Well, the pot is French too... :-)! I chopped some vegetables (agria potatoes,
carrot, onion, celery -with leaves-) added one fresh yellow chili and some Italian parsley, then sauteed everything with 2 tbsp of olive oil. Then I added one can of Italian cherry tomatoes, one can of Italian chick peas, some water from rinsing both cans, and a little (very little) Vegemite. Simmer simmer simmer, until the potatoes start to mush and the carrots are soft. Then add salt to taste, and serve.
